endive apple walnut salad
Ideal for an appetizer or even to accompany grilled meat or smoked trout, prawns or smoked shoursn for example, this recipe for apple and walnut endive salad is ready in a few minutes. Light and tasty, it will delight the taste buds of your guests.
- 3 chicory
- 2 apples
- 70 g walnut kernels
- 4 tbsp. at s. walnut or hazelnut oil
- 1 C. c. cider vinegar
- 1 C. c. lemon juice
- 1 C. c. mustard
- Salt, ground black pepper
Preparation 15 mins
Detach the endive leaves one by one, wash them then dry them in a clean kitchen towel. Finely chop the endives then put them in a large salad bowl with the walnut kernels. Peel and core the apples then cut them into small dice. Cut the Roquefort into cubes and add them to the salad bowl with the apples.
In a bowl, pour the salt, pepper, mustard and add the vinegar and lemon juice. Mix with a fork. Add the oil while emulsifying. Pour the vinaigrette over the endives and mix gently. Serve immediately.
For an even more gourmet salad, you can add diced Comté cheese and raisins, for example.
