Easy ink squids
Ingredients :
- 1.5 kg of squid
- 1kg tomatoes
- 2 cloves garlic
- 2 large or 3 small onions
- 3 or 4 shallots
- 1 good glass of white wine

Brown the squids so that they throw away their water, drain them, put the squids aside and their water in a container. Brown in a large sauté pan: 2 cloves of garlic, 2 the onion and 4 the shallot, all very finely chopped.

Peel 1 kg of tomatoes, seed them and cut them into small cubes, add them to the garlic – onion – shallot mixture. Once the tomatoes have melted well, it should give you a fairly consistent sauce.

Add a small box of tomato puree, add white wine (1 good glass) and simmer for 1 hour, then add the squid, with their water.

Leave to simmer for 30 min, empty the pockets of ink into the sauté pan (pierce the pocket with a knife), mix well, flambé everything in the cognac (essential this gives all its flavor to the dish), let simmer again for 15 min.

Serve very hot with rice.
