Easy chestnut soup
Here is an easy-to-make chestnut soup recipe composed only of potatoes, fresh chestnuts, chicken broth and finally Laughing Cow cheese for the creamy side of this gourmet velouté. This simple recipe can be enjoyed with pan-fried mushrooms or foie gras.
- 250g chestnuts
- 2 potatoes
- 1 chicken cube (or 2 according to taste)
- 2 laughing cow

To make this chestnut velouté, cook the chestnuts in water for 35 minutes in a large saucepan. Then peel them. Put some water to heat with the poultry cube.

Then add the chestnuts and potatoes and cook for 30 minutes in the chicken broth. Then, mix the velouté with 2 Laughing Cow if it is not thick enough.
Season with salt and pepper then immediately pour your velouté into soup plates and enjoy it with croutons of homemade bread, for example.
To give more flavor to this velouté, you can add grilled in olive oil which will go very well with this chestnut soup. It is also possible to replace Laughing Cow with liquid cream. To do this, add the cream when mixing your soup.
