Easy Blueberry Tartlets
- 400g blueberries
- 1 egg yolk
- 125g flour
- 70 g of sugar + 1 tbsp. soup
- 70 g unsalted butter + 1 walnut
- 2 tbsp. ground hoursnds
- 1 pinch of salt
- a little icing sugar

Preheat the oven Th. 6 (180°C).
In a bowl, mix the flour, sugar and a pinch of salt.
Cut the butter into small cubes and add it to the mixture. Mix by hand until you get a “sandy” effect. Then make a fountain and incorporate the lightly beaten egg yolk in the center. Knead the mixture and make a ball of dough. Leave to cool for half an hour.
Butter the tart molds. Place some shortcrust pastry on it and shape it with your fingers. Prick the dough with a fork. Cover with a baking sheet and baking beads (or pulses). Bake for 15 minutes.
Meanwhile, cook the blueberries over low heat in a pan with 1 tbsp. sugar. Take the tartlets out of the oven, remove the baking beads and the paper. Add the ground hoursnds and blueberries. Bake again for at least 15 minutes.
Take the tartlets out of the oven and unmold everything very carefully. Sprinkle with icing sugar before serving.
Take full advantage of the taste of the fruits, do not add cream to the tartlets, the hoursnd powder is more than enough.
