Cupcakes with red fruits and whipped cream
- For the cupcakes
- 200g frozen berries
- 3 large eggs
- 150g sugar
- 150g butter
- 160g flour
- 1/2 sachet of yeast
- 2 tbsp. liquid vanilla
- For the whipped cream
- 20 cl of full liquid cream (very cold)
- 1 packet of whipped cream
- 1 sachet of vanilla sugar

Preheat the oven th.6 (180°C).
Take the fruit out of the freezer. Place them in a bowl.
Whisk the eggs and sugar, then add the flour, baking powder and melted butter.
Mix, add vanilla.
Finally, add the fruit (not completely thawed, keep some for decoration), and mix gently so as not to crush them.
The batter will color slightly, but don’t mix too much anyway.
Butter your cupcake molds, pour the batter in and bake for 25 minutes (or pour directly into your cupcake cases). Check the cooking with a knife: stick it in the heart of the cupcakes, it should come out dry.
For the whipped cream:
Prepare the whipped cream by beating the liquid cream (very cold) with a whisk for 1 min. Add the vanilla sugar and the sachet of whipped cream.
As soon as the cream sticks to the branches, stop beating.
Once your cupcakes are cold, cover them with whipped cream using a pastry bag, and decorate with a few red fruits set aside.
