- 2 grapefruits
- 2 lawyers
- 5 oysters
- 200g of salicornia
- rice paper

- 20cl cognac

Peel the avocados and grapefruits, cut them into small brunoises then discard.

Crab soup: Brown the crab claws and heads in a casserole dish, deglaze with cognac and wet up. Strain the soup and reduce it to obtain a smooth sauce.

The spring roll: separate the preparations of brunoise in two. Roll out a sheet of rice and place all the ingredients inside. Roll up and wrap tightly in cling film.
