Crispy Pesto Cookies
Are you looking for a hot and crispy amuse-bouche for your next dinner aperitif? This little recipe for crispy pesto biscuits is easy and quick to make and very fragrant thanks to this typical Italian condiment: the green one based on basil, and the red one based on dried tomatoes. The combination of the two creates an amazing blend of herbal flavored flavors that will surprise your guests and will undoubtedly whet their appetites.
- 1 puff pastry
- 1 small jar of green pesto
- 1 small pot of red pesto
Preparation 5 minutes
Cooking 15 mins
Cut the puff pastry in half and roll out each half in a circle using a rolling pin on a floured work surface.
How to peel garlic?
Spread the green pesto on top of one of the circles.
Spread the red pesto on top of the other circle.
Roll the circles of dough into very tight sausages.
Cover them with cling film.
Refrigerate them for 30 minutes.
Preheat the oven to 180°C.
Line a baking sheet with parchment paper.
Remove the cling film and cut each roll of dough into 1 cm wide sections.
Place the pieces of dough on the baking sheet.
Bake for 15 minutes until your crispy pesto cookies are golden brown.
Leave to cool in the open air after removing from the oven.
If you need to keep the cookies until D-Day, place them in an airtight box until tasting.

For crispy, golden brown cookies, brush the entire surface of each roll with a little egg yolk.
