Crisps with seeds and spices
Ingredients :
- 90g flour
- 1 C. coffee curry
- 4 small egg whites
- 80g butter
- sesame seeds – poppy
- Provence herbs
- flower of salt

Melt the butter and beat the egg whites. Mix the flour with the butter then add the egg whites, 1 pinch of salt and the curry. Cover this dough with a film and leave to rest in the fridge for 2 hours. Preheat the oven to 170°C and line a baking sheet with parchment paper. Spread a 1c. coffee of dough that you will flatten into a thin disk. Do the same for the rest of the dough.

Sprinkle one third of the disks with sesame seeds, the other third with poppy seeds and the last third with Herbes de Provence. Cook for about 6 minutes, until the crisps are golden brown. Sprinkle with fleur de sel when it comes out of the oven.
