Crepes with chocolate sauce
Ingredients :
- For the pancake batter:
- 150 g flour
- 20g melted butter
- 2 eggs
- 3 dl milk
- 1 pinch of salt
- For the chocolate sauce:
- 200g dark chocolate
- 4 tbsp. fresh cream
- 40g sugar

Take the butter out of the refrigerator and let it soften, in a ramekin, at room temperature.

Cut the dark chocolate into small pieces and set aside in a bowl.

Prepare the pancake batter in a bowl and coarsely mix the flour and salt.

Dig a well and add the beaten whole eggs in the center, all the milk little by little then the melted butter. Mix well using a whisk until you obtain a very liquid pancake batter. Cover and chill for 1 hour.

Before cooking the pancakes, check that the batter does not have any lumps on the surface. If not, whip it again for 1 to 3 minutes.

Next, heat up your crepe maker, grease it with a wooden crepe rake and cook your crepes in it one by one. Wait for the edges to peel off on their own before turning it over or flipping it to color both sides well.

Let cool for a few minutes, layering them in a large dish, before enjoying your gluten-free pancakes.

In a saucepan over a bain-marie, melt the chocolate in pieces while mixing with the sugar and 2 tbsp. tablespoons of water and fresh cream. Reserve your chocolate sauce in a sauce boat. As long as it is still hot, garnish the pancakes with it and roll the pancakes. You can also coat them.

Serve your pancakes with chocolate sauce immediately for dessert or for a gourmet snack!
