- 1.5 kg very ripe tomatoes
- 2 onions
- 2 cloves garlic
- 1 C. olive oil
- chopped parsley
- ground white pepper

Wash, peel and seed the tomatoes.

Cut them into quarters and remove their core.
Peel and finely chop the onions.

Peel and crush the garlic cloves.

Take a saucepan and put the oil in it.
Then, sauté the onions and tomatoes until they turn into purees.
Then, mix the preparation with the garlic and the chopped parsley.
Transfer the velouté to bowls and sprinkle with the white pepper.
