Corn lentil croquettes
Ingredients :
- 1 box of lentils
- 1 small can of corn
- 1 onion
- 1 bunch of parsley
- 2 tbsp. poppy seeds
- 50g flour
- 50g breadcrumbs
- 2 eggs
- ½ glass of oil
- salt pepper

Drain the lentils and corn.

Peel and cut the onion. Wash the parsley and tear off the leaves.

Coarsely chop the lentils with the onion and parsley.

Add the flour and the eggs to obtain a consistent paste, then the poppy seeds and the corn. Mix.

Make croquettes in your floured hands. Spread the breadcrumbs in a deep plate and roll the croquettes in it.

In a sauté pan, heat the oil over low heat. Brown the croquettes in it for 5 minutes on each side. Drain on absorbent paper and place them on a dish at the entrance to the hot oven, to prevent them from cooling.

Serve as soon as all the croquettes are cooked.
