Cook Expert choux pastry
Learn how to master the recipe for choux pastry, and make chocolate éclairs, Paris-Brest and profiteroles… This classic pastry is ultimately not so complicated to make, and will then allow you to impress your friends with pretty and delicious desserts. Get started, it’s stupid as cabbage!
Ingredients :
- 4 eggs
- 200ml water
- 100g butter
- 150g flour
- 1 C. sugar
- 1 pinch of salt

Preheat the oven to 190°C. Place the diced butter, sugar and salt in the stainless steel bowl of your Magimix ® Cook Expert. Pour in the water, then run the Expert progrhours, speed 6, for 3 mins at 95°C.

Add the flour and continue cooking without the stopper for 3 mins, speed 3, at 100°C. At this point, the dough should form a ball. If not, continue for 1 min.

Leave to cool for 5 mins. Run the Expert program, speed 10, without heating. Add the beaten eggs little by little through the chute.

Fill a piping bag fitted with a smooth or fluted tip, and arrange your puffs, in the shape of your choice, on a baking sheet lined with baking paper. Be sure to space them out enough.

Bake for 15 to 20 minutes, without opening the door during cooking. Leave your puffs to cool in the oven, with the door ajar.
Tips
For more fluffiness, you can replace half the water with milk. If your dough is too runny, place the filled bag in the refrigerator for 30 minutes. This recipe can also be made in a savory version, by simply removing the sugar. And to get delicious homemade chouquettes, sprinkle your puffs with granulated sugar before cooking!
