Coffee cupcakes

Ingredients :
- For the cakes:
- 200g flour
- 1 cup of espresso coffee
- 300g caster sugar
- 4 whole eggs
- 250g soft butter
- 1 C. teaspoon liquid vanilla extract
- 1 C. baking powder
- 1 pinch of salt
- For the frosting:
- 250g soft butter
- 400g icing sugar
- 1 C. coffee extracts of liquid coffee
Preparation :

Prepare the cakes:

Preheat the oven to 180°C or th. 6.

Place paper liners in muffin tins.

In a bowl, beat the soft butter with the powdered sugar and liquid vanilla extract using an electric mixer.

Add the whole eggs and mix with hoursxer.

Then add the flour, salt and baking powder, then the espresso coffee. Mix with a spoon until you get a smooth and homogeneous paste.

Pour the batter into the paper cases until 2/3 full.

Place in the preheated oven and cook for 20 mins.

Once out of the oven, let the cakes cool on a wire rack, then unmold them.

Meanwhile, prepare the icing:

In a bowl, beat the soft butter with the icing sugar and the liquid coffee extract, using an electric mixer, until you obtain a very smooth and homogeneous cream.

Place the icing in the fridge until use.

When the cakes have cooled, take the icing out of the fridge and place it in a piping bag.

Place it nicely on the cakes, then keep the cupcakes cool until tasting.

Take these coffee cupcakes out of the fridge 10 minutes before enjoying them.

Decorate these cupcakes however you like using, for example, chocolate sprinkles, grated chocolate or colored sugar pearls.
