Clam cream from Josette

- lean bacon: 3 slices
- chopped onion: 1
- milk: 2 dl
- fresh cream: 2 dl
- butter: 1 tbsp. soup
- fine salt, black peppercorns

Clean and open the clams like mussels. Filter the juice.

Peel the potatoes, cut them into small cubes and cook them in salted water.

Cut the bacon into strips and melt it in a saucepan, remove the bacon and brown the chopped onion, add the strained clam juice and cook for 5 minutes over low heat.

Meanwhile, cut the clams into small pieces.

Put the clams, milk, cream, butter and potatoes in the saucepan, salt, pepper, cook for 5 minutes over low heat.

Pour into bowls and garnish with the bacon bits.
