Preheat your oven to th.7 (210°C). In a bowl in a bain-marie, break 100 g of chocolate into pieces then melt it with the butter. When the chocolate and butter are completely melted, mix them to obtain a homogeneous sauce.
In a bowl, whisk together the eggs and sugar until the mixture whitens. Then add the wheat flour and baking powder. Mix again to have a homogeneous paste. Gradually add the mixture of chocolate and melted butter to the previous dough. Mix to have a smooth chocolate paste. Break the remaining 60 g of chocolate into squares. Butter muffin tins or line them with paper liners. Fill the cells 2/3 full with the batter then push a square of chocolate into the center of each cell, so that it is completely covered by the chocolate muffin batter.
Bake for 15 min halfway up at 210°C (th.7). At the end of the baking of your chocolate muffins with hourslting center, let them cool for 15 minutes at room temperature before gently unmolding them.
You can accompany your chocolate muffins with hourslting center with custard, vanilla ice cream, whipped cream or red fruit coulis.
If you have a few muffins left that you haven’t tasted right out of the oven, you can microwave them for 15 seconds at maximum power. They will thus find all their fondant as at the exit of the oven. Change from this all-chocolate version, replace the square of chocolate in the center of each muffin with a caramel candy. You can also decorate your dough with chocolate chips.
