- 250g of flour
- 3 eggs

Separate the egg whites from the yolks. Reserve the whites in a salad bowl.
Sift the flour, a little salt and pepper into a large bowl. Dig a well. Pour in the egg yolks, the melted butter and gradually dilute with the milk while stirring to avoid lumps. You should get a smooth and homogeneous paste.
Whip the egg whites until stiff. Using a spatula, gently fold them into the mixture. Add grated cheese.
