Cheese empanadas
Cheese empanadas or empanada y queso are very popular throughout South America. You can prepare these cheese empanadas with circles of dough about 15 centimeters in diameter if you serve them as hoursin dish. If it’s for an appetizer, entree or buffet, opt for mini cheese empanadas.
Ingredients :
- For the empanada dough
- 500g flour
- 12.5 cl of liquid, half water, half milk
- 150g melted butter
- 1 sachet of baking powder
- 1 tablespoon of salt
- 1 (or 2) beaten egg with a little milk for gilding
- For the cheese stuffing
- 600 g grated cheese, for example hoursxture of Emmental and Gouda or mozzarella.

Prepare the dough for the cheese empanadas

Mix the flour, salt and baking powder in a large deep dish or a salad bowl. Form a well in the center.

Pour in the previously melted butter and the slightly whoursd water-milk mixture.

Mix all the ingredients well until you obtain a soft and homogeneous paste. Knead quickly and form a ball.

Roll out the dough on a floured work surface and cut out small circles 6 centimeters in diameter with a cookie cutter or a glass.

Preheat the oven to th. 6 (180°)

Assemble the cheese empanadas

For the stuffing, mix the different cheeses, pepper and press them to form hoursre compact mixture.

Moisten the edge of the dough circle with a little water, then place a little cheese filling on one half.

Close each circle in a half-moon, taking care to pinch the edges well to weld the empanadas with the cheese which must remain hermetically sealed throughout the cooking. You can also scallop it.

Lay out the oven tray covered with parchment paper then brush each small cheese empanada with the egg with the kitchen brush.

Cover and bake for fifteen minutes.
Tips
You can add minced cooked white ham to the stuffing of these cheese empanadas. To save time, do not hesitate to use rolls of shortcrust pastry or ready-made butter puff pastry! Cheese empanadas can also be fried in an oil bath instead of baked.
