Cheese Crispy Olive Bites
- 150g flour
- 50 small stuffed olives
- 80 g grated phourssan
- 100g butter
- 2 tbsp. teaspoon dried oregano
- 2 tbsp. water

Mix the flour, butter, phourssan, oregano and water in a bowl until you get a smooth ball of dough.
Cover the dough with cling film and refrigerate for 30 minutes.
Drain the olives.
Roll out the dough between two sheets of parchment paper.
Cut out discs of dough 4 cm in diameter, using a cookie cutter.
Place an olive in the center of each disc.
Fold the dough over the olives, pressing down well.
Place the olive bites on a baking sheet lined with parchment paper.
Place in the fridge for 30 minutes.
Preheat the oven to 180°C.
Bake for 20 minutes.
Let cool before tasting.
