Casserole of clams and cockles
- 3kg of clams
- 2kg of cockles
- 4 chives
- 1 lemon
- 4 tablespoons of olive oil
- 30cl of dry white wine
- 1 onion
- 1 tablespoon coarse salt

Soak the cockles and clams for a day in cold water that you will change at least twice, in order to empty them of their sand.
Peel and chop the onion, wash the lemon that you will cut into rings, then also peel the chives
Carve an onion
Heat the olive oil in a casserole, in which you will brown the onions, then gradually add the clams, the chives, the lemon and the coarse salt
Add pepper and wine. Cover your casserole and cook for 10 minutes, stirring regularly
Serve hot after cooking. It’s ready !
