Carrot soup with Thermomix
An economical recipe made easy with your Thermomix. This vegetable soup is ideal for a delicious appetizer for the whole family. Carrots, onion, curry, cream, butter, salt, pepper and let’s go for the preparation of your carrot soup.
Ingredients :
- 1 kg of carrots
- 1 onion
- 1 C. coffee curry
- 2 tbsp. liquid cream
- 10 g unsalted butter
- 1 liter of water
- salt pepper

Peel and cut the onion in 2 and the carrots in pieces. In the bowl of the Thermomix, put the onion, mix 5 sec at speed 5 and scrape the edges with a spatula.

Add the butter and brown for 2 min at 80°C at speed 1 then the carrots and mix for 10 sec at speed 8. Then add the water, curry, salt and pepper then program 20 min at speed 2, add the cream then mix 1 min at speed 10. Serve hot.
Tips
Want more flavor, add coriander, cumin, or sweet pepper. You can also add 2 zucchini for more consistency. Brown smoked bacon in a pan and serve with garlic croutons for a complete meal.
