Carrot and cumin cake

Ingredients :
- 3 eggs
- 4 carrots
- 1 shallot
- 50 g of grated cheese
- 200g flour
- 10 cl of olive oil
- 10 cl of milk
- 1 packet of baking powder
- 1 C. cumin powder
- salt pepper

Peel the carrots and grate them. Book. Peel the shallot and mince it.

Pour a little olive oil into a pan. Add the shallot and sauté for 5 minutes. Add the grated carrots and sauté for another 5 minutes. Add the cumin and cook for 10 minutes. Mix well. Salt and pepper to taste. Remove the pan from the heat and let cool.

In a salad bowl, mix the eggs with the olive oil, the liquid cream and the milk. Add flour and baking powder. Add salt and pepper. Add the carrot preparation and the grated cheese. Mix well.

Lightly oil a cake tin. Pour the mixture into the mold. Bake for 50 minutes (oven preheated to 180°C). Check for doneness with a knife blade. Unmold the cake and let it cool before eating it.
Tips
You can vary the filling of this carrot cake according to your desires. Thus, you can add walnuts or crushed hazelnuts to the dough. You can also add plain or smoked bacon or diced ham.
