Choursr rings
Squid fritters are Spanish tapas that are eaten all over the world. They consist of squid rings coated in a thin layer of donut batter. Fried in an oil bath and served with a green salad and a fresh lemon, they are a gourmet and original starter. One thing is certain, these squid fritters will delight your guests!
Ingredients :
- 400g calamari
- 125g flour
- 1 whole egg
- 10 cl of milk
- 5 cl lukewhourswater
- 1/2 teaspoon baking powder
- frying oil
- 1 pinch of salt

Sift the flour and baking powder into a bowl. Make a well in the center and break the egg into it. Mix with a wooden spatula. Gradually pour in the milk then the lukewhourswater while stirring vigorously to avoid lumps. The batter should be smooth and fairly thick. Add the salt and mix again.

Cover the bowl with a clean kitchen towel and let the dough rest for about 30 minutes at room temperature.

Meanwhile, cut the whole calamari into not too thick rings. Wipe them with absorbent paper. Dip the calamari rings in the donut batter so that they are well coated.

Heat oil in a large skillet or in your deep fryer. When the oil is hot, gently remove several rings of calamari from the donut batter, then drop the donuts into it. Let them fry for a few minutes, turning them occasionally, until golden brown. When the squid fritters are cooked, gently remove them from the fryer using a slotted spoon, then pat them dry on paper towels.

Repeat the operation to cook the other calamari rings.
Tips
Make a tasty sauce to accompany these squid fritters. For this, mix 2 tbsp. mayonnaise, 2 finely chopped gherkins and 1 minced shallot. Mix. Add 1 tbsp. coffee of wine vinegar. Salt and pepper to your liking. Serve this sauce chilled with the still whoursdonuts.
