Burger – Sauerkraut: Sauerkraut Burger
- 200 g breast
A pinch of baking powder
300 g potato
100 g cabbage
80 g flour
3 egg < br> 2 tablespoons of mustard
200 g of white wine
1 large onion

Topping and preparing the potatoes:
Cook 250g of potatoes for 15 minutes with the skin in salted water, cold start.
Chop the pork belly.
Cut the sausages into slices, mix with the brisket and add 1 tablespoon of mustard and 1 egg.
Salt and pepper.
Place in hourstal cookie cutter.
Preparing the onions:
Carve an onion
Cut thick slices of onion and sweat with a knob of butter until lightly colored.
Add 60g of cabbage and deglaze with white wine.

Reduce for 5 minutes.

Preparing the blinis:
Pass the potatoes through a sieve to remove the skin.
Add to 200g of potato pulp 80g of flour and 1 egg. Salt.
Add a pinch of baking powder.

In a blender, place the remaining cabbage and mix with 1 tablespoon of mustard and a little white wine.

Cooking the blinis:
In a dry skillet, cook 4 discs of blinis.
Brown on each side for about 3 minutes over low heat.
Add olive oil at the last moment.
Cut the rest of the potato into a brunoise and fry for 8 minutes at 180°C.
On a plate, arrange the blinis.
Lay the cooked minced pork on top.
Add the cabbage and onion mixture, 1 tablespoon of sauerkraut mayonnaise and a few parsley leaves.
Cover with blinis and sprinkle with sesame seeds.
Garnish with potato croutons.
