Burger buns or brioche buns (vegan)
For burgers, the breads I prefer are burger buns or brioche buns (vegan), soft as you wish. Here is my hamburger bun recipe that will allow you to make delicious homemade burgers. I used vegetable milk and a flax egg (which can be replaced by a chia egg, I explain the principle in the recipe), so they will suit everyone, especially vegans or intolerant people. Ingredients :
- 215 g T55 flour + a little more for kneading
- 1 flax egg (1 tbsp flax seeds + 1.5 tbsp water)
- 60 ml soy-type vegetable milk
- 1 C. tablespoon vegetable oil (coconut oil)
- 1 C. tablespoons whole brown sugar (or other unrefined powdered sugar)
- 1 pinch of fine salt
- 1/2 tsp. tablespoons dry baker’s yeast (about 5 g)

To make vegan bread, start by grinding the flax seeds then add the water and let stand for 10 minutes. They should have a gelatinous consistency similar to egg white. In a bowl, mix the milk, oil, flax egg, sugar and salt.

In a bowl, pour 60 ml of lukewhourswater (not hot water!) then pour in the baker’s yeast. Leave to stand for 1 to 2 minutes until completely dissolved. Pour into the salad bowl and mix. Add the flour and mix with a large spoon. Continue kneading for 10 minutes by hand. If the dough is too sticky, you can add a little flour but not too much (about 1 tbshoursximum), the dough should be very flexible.

Cover with a clean cloth and let rise for 1 hour in a whoursplace such as an oven preheated to 20/30°C, the dough should have at least doubled in volume. Degas the dough with your fist, form a ball again and cut 4 equal pieces, shape 4 balls and place them on a baking sheet covered with baking paper.

Cover with a cloth again and leave to rise for 30 to 45 minutes in the ambient air, the dough pieces should double in volume. Preheat the oven to 170°C, brush the top with vegetable milk and sprinkle with the seeds of your choice (flax, poppy, squash, sesame, etc.) or leave them plain.

Bake your burger buns or vegan brioche buns for 15 to 20 minutes, watch the cooking closely, they should be just golden.

Tips
If you don’t have enough to grind flax seeds, you can replace them with chia seeds to make your vegan burger buns or brioche buns. No need to grind them to release their mucilage.
