bruschetta
As an aperitif or as a starter, these bruschettas with pesto and seasoned tomatoes will delight you!
Ingredients :
- 4 large or 8 small slices of country bread
- 8 medium ripe vine tomatoes
- 2 cloves garlic
- 1/2 jar of green pesto
- 1/2 bunch of fresh basil
- 1 C. teaspoon dried oregano
- 3 large tbsp. olive oil
- salt, pepper to taste

Wash, sponge and finely chop the fresh basil.

Peel and chop the garlic.

Scald, peel, seed and cut the tomatoes into small cubes. Place them in a bowl and drizzle them with olive oil. Add the minced garlic, chopped basil and dried oregano, salt and pepper to taste, then mix well.

Cover the bowl with cling film and place it in the fridge for at least 12 hours before serving.

When ready to serve, toast the slices of country bread in a toaster or under the broiler, placed on a baking sheet covered with parchment paper.

Once the slices of bread are toasted, let them cool to room temperature.

When they are cold, spread the green pesto on one side of each slice of toast. Place them, “pesto” side up, on a serving platter.

Take the tomato mixture out of the fridge and spread it over the slices of toast. Adjust the seasoning with salt and pepper if necessary.

Serve these Italian-style bruschettas immediately on the plates. Enjoy them as an aperitif or as a starter, accompanied by a seasoned green salad.
Tips
For hoursre gourmet version, add slices of mozzarella on top of the tomato preparation, then put the bruschettas for a few minutes under the broiler just before serving them.
