Bruschetta with tomato, phours ham and mozzarella

Ingredients :
- 5 olive tomatoes
- 2 tbsp. olive oil
- 180 g special cooking mozzarella
- 6 slices of country bread
- 2 cloves garlic peeled
- 6 thin slices of Phours ham
- 3 sprigs of fresh thyme
- salt pepper

Start by removing the peduncles from the tomatoes and plunge them for 10 seconds in boiling water then refresh them under cold water. Then peel them, deseed them and cut them into small dice then put them in a salad bowl. Finally, salt with fleur de sel, pepper and drizzle with olive oil.

Next, cut the mozzarella into small pieces. Preheat the oven to the grill position then heat the slices of bread and rub them with the garlic cloves. Place the 6 slices of bread on the oven tray, spread the tomato and olive oil filling on top, then add the slices of ham on top and three cubes of mozzarella.

Place the pan under the broiler until the cheese melts. Remove from the oven, sprinkle the bruschetta with fresh thyme and serve immediately with a green salad.
