- plain or flavored frying oil
- salt pepper
- Espelette pepper
Preparation 10 minutes

Break the egg into a small ramekin. Salt, pepper and beat it lightly. Pour the breadcrumbs into another ramekin and mix it with a little Espelette pepper.
Then pass each ball of mozzarella in the egg then in the breadcrumbs. Repeat the operation again, egg and breadcrumbs. Store them in the refrigerator if you are not cooking right away.
In a frying pan, heat the oil to brown your mozzarella balls on each side. Place them on a sheet of absorbent paper. Here we pricked our marbles 2 by 2 on small skewers that we placed in verrines. Serve your mozzarella balls very hot to appreciate the crispy exterior and the tender interior.
If you don’t have mozzarella balls, you can very well cut a ball of mozzarella into pieces to make this recipe. The mozzarella is rather bland as is. So generously season the breadcrumbs by adding Espelette pepper as here. You could use cayenne pepper, curry, dried herbs or other spices of your choice. Also use a homemade flavored frying oil or special melted oil type.
