Beet Quinoa Steak Burger
Ingredients :
- For the quinoa steaks:
- 150g pre-cooked quinoa
- 3 eggs
- 20g flour
- 1 pre-cooked red beet
- 1 carrot
- 1 shallot
- 1/2 onion
- 3 cloves of garlic
- 7 cl of white wine
- 4 tbsp. olive oil
- a little ketchup
- Provence herbs
- salt pepper
- For the burgers:
- 4 burger buns
- 3 tomatoes
- 2 large avocados
- 2 red onions
- a few lettuce leaves
- ketchup

Prepare the quinoa steaks:

Peel and chop the onion, shallot and garlic cloves.

Peel and cut the carrot and beetroot into small pieces.

Heat 2 tbsp. tablespoon olive oil in a skillet.

Brown the vegetables (except the beets) for a few minutes.

Deglaze with white wine then add quinoa, beetroot, Provence herbs, salt and pepper.

Mix well then remove from the heat and pour into a bowl.

Add the eggs, flour and ketchup and mix well.

Form 6 balls and flatten them slightly with your floured hands.

Reserve 1 hour in the fridge.

Heat 2 tbsp. tablespoons of oil and cook the quinoa steaks 7-8 minutes on each side.

Meanwhile, peel and cut the red onions into rings.

Clean and cut the tomatoes into slices.
