Basil ice cream
Yes, you read that right: this is indeed a basil ice cream recipe. With Thermomix, put on your 3-star chef apron. Original and tasty, this ice cream is an invitation to travel. A dessert of choice, worthy of the greatest tables, economical and quick to make.
Ingredients :
- 1 bunch of basil + 12 leaves
- 500g milk
- 6 egg yolks
- 70 g caster sugar
- 25 cl whipping cream

Pour the milk into the bowl and heat it for 5 min, 100°C, speed 1. Add the bunch of basil. Let it infuse for 10 minutes. Pour in the milk, egg yolks, sugar and cream. Program your robot 7 min, 80°C, speed 4. Let cool. Add the 12 basil leaves. Blend them for 10 sec, speed 5.

Pour the preparation from an ice cube tray and put it in the freezer for at least 3 hours.

To serve your basil ice cream: put the ice cubes in the bowl. Mix 5 sec in Turbo mode, then 1 min / speed 9. Help yourself with the spatula. Then insert the whisk. Blend 20 sec, speed 3.
Tips
Serve your basil ice cream with raspberries or strawberries. Also delicious with a chocolate cake or a rhubarb compote. For a touch of originality, add 2 mint leaves to your recipe.
