Barbel bream Shads with sorrel
Ingredients :
- 100g sorrel
- 2 hard-boiled eggs
- 1 shallot
- 1 slice of bread
- 1,200 kg fish
- 1 C. lemon juice
- 3 tbsp. butter
- salt pepper

Melt 100 g of sorrel in 1 tbsp. butter.

Then chop it with 2 hard-boiled eggs and 1 shallot.

Add 2 tbsp. tablespoons of cream, 1 slice of crumbled bread, salt and pepper.

Fill a fish of about 1,200 kg with it, surround it with a bard of bacon and lay it in a buttered gratin dish.

Cover it with breadcrumbs. Sprinkle with knobs of butter and cook for 40 minutes in hoursderate oven, basting during cooking with 2 tbsp. tablespoons of melted butter with 1 c of lemon juice.
