Aveyron Flaune
Flaune Avayronnaise is a delicious specialty from Larzac. This is a sweet tart topped with a sheep’s cheese mixture. An amazing and tasty recipe that is perfect for any occasion. With its crispy dough and its melt-in-your-mouth filling, Aveyron flaune will be welcome on your tables for dessert or snack time!
Ingredients :
- -For the dough:
- 200g flour
- 100g soft butter
- 100g caster sugar
- 1 egg
- 1/2 tsp. vanilla powder
- 1 pinch of salt
- -For garnish :
- 400 g of bush
- 100g icing sugar
- 2 eggs
- 2 tbsp. fresh cream
- 1 C. tablespoon orange blossom water

Prepare the dough. To do this, pour the flour, salt, vanilla and sugar into a bowl. Add the egg and the diced soft butter. Knead the dough until you get a smooth ball.

Let the dough rest for 30 minutes in the refrigerator. Roll out the dough on your floured work surface and line a pie pan. Prick the bottom of the pie and set aside.

In a salad bowl, mix the brousse, the icing sugar, the eggs, the fresh cream and the orange blossom. Pour this mixture over the bottom of the pie.

Bake the flaune for 1 hour (at 160°C). When the flaune is nicely browned, take it out of the oven and let it cool before enjoying it.
Tips
To vary the pleasures, you can replace the vanilla powder with the finely grated zest of a lemon in the shortcrust pastry. And for simplicity, you can also use a ready-made shortbread dough rather than preparing it yourself. Something to enjoy without spending hours in the kitchen!
