Asparagus velouté with Thermomix
Winter has definitely set in, nothing better than tasting a succulent homemade asparagus velouté! A recipe that is both gourmet, tasty, creamy and very quick to prepare in your Thermomix. Asparagus, an onion, water, a vegetable cube, liquid cream, salt, pepper and that’s it! Make way for the preparation of your asparagus soup with the Thermomix.
- 400g green asparagus
- 1 onion
- 400ml water
- 1 cube of vegetables
- 2 tbsp. fresh cream
- 3 sprigs of parsley
- salt pepper
Preparation 10 minutes
Cooking 18 mins
Peel and cut the onion in 2. Wash the asparagus, put the tips in the steamer basket and cut the stems into 3 cm sections.
Carve an onion
In the bowl of the Thermomix, put the onion and mix 5 sec at speed 5. Add the asparagus stalks, water, then mix 5 sec at speed 5. Then add the cube of vegetables, salt, pepper then put the steam basket in place and program 18 min at 100°C at speed 1.
Once cooking is complete, remove the steamer basket. Add the crème fraîche and the parsley to the bowl, then blend for 1 min at speed 10. Serve with the asparagus tips.
