Appetizer pretzels
Ingredients :
- 1/2 liter of milk
- 25g sugar
- 650g flour
- 50 g of baker’s yeast
- 75g butter
- coarse salt

Make a sourdough:

Whourshalf the milk and dissolve the yeast in it. Make a fountain with the flour and pour the milk into it. Knead. Leave to rise until the dough has doubled in size.

Add the other half of the milk, butter, sugar, salt. Knead and leave to rise for 30 mins. Drop the dough and stretch it into a long roll.

Cut the dough into small pieces and form the pretzels.

Drop the pretzels into boiling water. Remove them as soon as they swell. Brush them with egg white and sprinkle them with coarse salt before putting them in the oven.

Serve as an aperitif.
